Ingredients:
1 cup yellow split lentils (Toor dal)
3 cups water

Instructions:

Rinse and Prepare Lentils:
Wash the lentils thoroughly in cold water until the water runs clear.
In a large saucepan, combine the washed lentils and 3 cups of water. Add turmeric powder, and bring to a boil. Reduce heat and simmer, partially covered, until lentils are soft and cooked through (about 20-25 minutes). Stir occasionally.

Prepare the Tadka (Tempering):
In a separate small pan, heat the vegetable oil or ghee over medium heat.
Add cumin seeds, mustard seeds, dried red chilies (if using), and asafoetida. Sauté until the seeds splutter and become aromatic.
Add chopped onions, green chilies, garlic, and ginger. Sauté until the onions turn golden brown.

Add Tomatoes and Spices:
Add the chopped tomatoes to the pan and cook until they become soft and the oil starts to separate.
Add garam masala, red chili powder, and a pinch of salt. Stir well.

Combine the Tempering with Cooked Lentils:
Once the lentils are cooked, mash them slightly with the back of a spoon or a potato masher for a creamier consistency.
Pour the prepared tempering mixture into the lentils and stir well. Add more water if needed to achieve your desired consistency.

Simmer and Season:
Simmer the dal for an additional 5-10 minutes to allow the flavors to meld together.
Adjust salt and spice levels according to your taste.
